why would a manitowoc ice machine have 2 floats

Harvest Float (often the rear/side one, red wire in many units):
Signals the control board to start the harvest cycle once the ice sheet is ready.
It detects when the ice has built up enough (as the water level drops or the float position changes during freezing).
Helps ensure the machine doesn’t harvest too early or too late.

Ice Thickness / Water Level Float (often the front one, black wire in many NEO units):
Controls how much water is in the sump/trough during the freeze cycle.
It determines the ice bridge thickness (the thin layer connecting the cubes).
Adjustable (usually 3 positions) to make the ice bridge thicker or thinner. Lower setting = thinner bridge/smaller cubes; higher = thicker bridge/larger cubes.
The water inlet valve fills until this float rises and shuts off the fill.
